Ingredients
1 lb fresh flat rice noodles (separate them)
8 oz beef (slice them into bite size, about 1/8” – 1/4” thick)
1/4 of a medium size onion (sliced)
3 green onions (separate green and white parts, cut them into 1 1/2”- 2” long and then slice them thin horizontally)
1/2 – 3/4 C bean sprouts (take off both ends, wash and drain)
Toasted sesame seeds for garnish(optional)
Beef Marinate
1 T soy sauce
1/2 t sugar
1/4 t Garlic powder
1 T potato starch (can substitute with 1 1/2 T of corn starch)
1 T egg 2-3 T water (add little by little)
1 T Sesame oil (add at the end)
1 T soy sauce
1 T dark soy sauce (might need a little more for color depends on brand)
1/2 t sugar
1/2 T oyster sauce
Instructions
1. Mix marinate with beef except for water and sesame oil, mix well. Preferably use hand so you can feel the beef. Add 1T of water at a time, keep mixing with hand and let the beef absorb the water slowly. Continue to add more water and massage until the beef is light and fluffy. Add sesame oil at the end and mix well.
2. Preheat pan and then add oil, make sure the oil is hot. Pan fry the beef until medium well, set aside.
3. Add a little oil to the same pan, pan fry onion and white part of the green onion for about a minute. Then add the rice noodles to the pan, let it pan fry one side for a minute or two until it is slightly brown, then flip noodles and pan fry the other side also until slightly brown. Then add the sauce and mix well with the noodles, keep tossing until all noodles become brown. Might need a little more dark soy sauce to make the noodles darker in color. Add beef, keep tossing. Then add bean sprouts and green onion. Keep tossing until the bean sprouts are tender, then serve. Can top with sesame seeds.
PS: you may add yellow chive with the bean sprout if you prefer. I didn’t have any on hand, so I skip it.
