3Dried Scallopssoak in water for couple hours and steam with water for 30 mins, hand shredded and save water
5Shiittake Mushroomsoak in water until soften, rinse and squeeze all water, remove stem and diced
Some Dried Shrimpssoak and eveined
Some Roasted Peanuts
Some Cilantro and/or green Oniondiced
Some Chicken Broth or water from the dried scallops
Seasonings
2TSoy Sauce
½TDark Soy Sauce
Pinch of Sugar
Pinch of Salt
Instructions
Stir fry all sausages, mushroom, shrimp, scallop...etc in a clean pan until you can smell the aroma of the meat and some oil is released from the sausages, set aside
After soaking the sticky rice for at least 10 hours, (this time they were soaked for almost 20 hours), drain them in colander for 15 minutes. Hot pan hot oil, stir fry sticky rice for about few minutes.
Add 2 T of chicken broth or scallop water at a time and stir fry for about a minute. I repeated this process 4 times.
Then add 4 T of broth and stir fry, cover with a lid for a min, then open the lid and stir fry, cover again for another minute, stir fry again, repeat 2-3 more times.
Try the rice and they should be completely cooked if they are soaked long enough. If not, add 1 T broth at a time and stir fry until they are cooked.
Add all meat, mushroom…etc ingredients into pan, stir fry to mix them well
Season with soy sauce and dark soy sauce, continue to stir fry until they are all brown evenly in color. Sugar and salt to taste
Turn off fire, add cilantro and/or green onion and fried peanuts and mix well!
Notes
Soaking time: 10 hours (mostly hands-off the rice just sits). Not included in prep time.
