Curry crab layered over rice in a cake ring, topped with fish roe

This curry crab rice (咖哩蟹魚籽飯) started with a Hong Kong foodie video I couldn’t stop thinking about — curry crab over rice topped with fish roe, looking so irresistible I had to recreate it at home. Since no one in Vegas makes it like this, I rolled up my sleeves. Rich, creamy curry, sweet crab meat, fluffy rice, and that pop of briny fish roe on top… just like something you’d only get in Hong Kong. I even assembled it like a cake, just like how they served it!

Why You’ll Love This Curry Crab Rice

I make this curry crab rice when I’m homesick for Hong Kong. It’s the kind of dish you’d find at a busy dai pai dong or a seafood restaurant in Sai Kung — rich curry, sweet crab, and rice to soak it all up — except here it’s stacked like a little cake and crowned with fish roe that pops in your mouth. Nobody in Vegas makes it like this, so I had to figure it out myself. The canned crab meat keeps it weeknight-easy, the coconut curry comes together in one wok, and the whole thing looks like you spent hours when it’s really about 30 minutes of actual cooking.

Ingredients 配料

Curry Sauce 咖哩汁

  • 1 Tbsp cooking oil (食油)
  • 1 onion, diced (洋蔥)
  • 2 cloves garlic, minced (蒜蓉)
  • 1–2 Tbsp curry paste (咖哩膏)
  • 1 can (13.5 oz / 400 ml) coconut milk (椰奶)
  • 1 Tbsp oyster sauce (蠔油)
  • Salt and sugar, to taste (鹽、糖)
  • Cornstarch slurry (cornstarch mixed with equal parts cold water), as needed (生粉水)

Crab & Assembly 蟹肉及上碟

  • 1 can (16 oz) crab meat, drained (蟹肉)
  • 1 cup chicken broth (雞湯)

  1. Rinse 2 cups jasmine rice, add 2 cups water (1:1), and cook in the rice cooker.

Tips 小貼士

  1. The fish roe (tobiko) from the Asian market is the whole point — its briny pop against the rich curry is what makes this dish.
  2. Spatula test: the curry should coat the back of a spatula in a thick, even layer before you stop adding slurry.
  3. Next time: pour extra curry sauce so it cascades like a waterfall when the ring comes off!
  4. The 1:1 rice-to-water ratio in the rice cooker gives perfect fluffy rice for packing.
  5. Make the curry sauce ahead: it keeps 3 days in the fridge and reheats beautifully — just warm it gently and do the ring assembly right before serving.
  6. Fresh crab option: if you get your hands on live blue crabs, steam them, pick the meat, and use about 1 cup in place of canned.

Curry Crab Rice FAQ

Can I use fresh crab instead of canned?

Yes — about 1 cup of picked crab meat from steamed blue crabs works beautifully. The canned version is my weeknight shortcut and honestly tastes great under all that curry.

Where do I buy fish roe (tobiko)?

Any Asian market with a Japanese section — look in the freezer or refrigerated sushi section. It keeps for weeks in the fridge once opened.

Can I make it less spicy?

Use 1 tablespoon of curry paste instead of 2, and add an extra splash of coconut milk. The flavor stays rich without the heat.
